What's for dinner?

Every two weeks Josh and I have the same conversation.

Me: I need to go grocery shopping and I need dinner ideas.

Josh: K

Me: What sounds good?

Josh: I don't know. What sounds good to you?

Me: I don't know. That's why I'm asking you.

Then we each take turns saying something that sounds good, which mostly likely will be shot down by the other.

Some of my favorites are:
Spaghetti, Cheesy Pasta, Navajo Tacos, Biscuits & Gravy

Some of Josh's favorites are:
Tacos, Hamburgers, Lasagna, Meatloaf, Steaks

I feel like we always eat the same thing. During the week I like easy, simple, quick dinner because I work so late. But on the weekends I want to cook fancier dishes then just tacos. Especially so I can have something to eat as leftovers in my lunch during the following week.

Do you have a crockpot? Here are my favorite recipes that are so good and don't require much work:

Mexican Chicken
3 chicken breasts
2 cans cream of chicken soup
1/2 can water
1 cup salsa
1 (15 oz) can black beans, rinsed and drained
1 (4 oz) can green chilis
1 tsp. chili powder
1 tsp. cumin
1/4 tsp cayenne pepper
1 1/2 cup Monterrey jack cheese Shredded

In the crockpot whisk together the soups, water and spices. Stir in the salsa, beans and green chilies. Place the chicken breasts in the mixture. Cover and cook on low 6 hours or high for 3 hours (I have let this cook on low for 8 hours and it is fine). Then take the chicken out and shred it. Put it back in the crockpot and stir in the cheese. Let cook another 30 minutes until cheese is melted and warmed through. Serve with tortillas or over chips for nachos or with shredded lettuce tomatoes and chips for taco salad.

HEAVENLY CHICKEN
1 cup cream of chicken soup
1 cup sour cream
2 cups of Monterrey Jack cheese
1 packet of Zesty Italian Dry dressing (this is in the salad dressing aisle)
Put all the above in the crockpot and stir together

Add 3 chicken breasts

Cook on low for 6 hours or high for 3 hours (same deal- I have done it for 8 and it is great). Take the chicken out and shred it and then return to the crockpot.

Serve with rice

EASY RICE TIP: I always used to use Minute Rice because it was so much easier, but then someone told me about this tip for real rice. We like the texture of real rice better, so it turned out great. 3 hours before you are going to eat the rice, boil your rice and water according to the amounts on the package (1 cup of rice and 2 cups of water is perfect for 2 people) and let it boil for 1 minute. Cover it. Then simply turn the heat off on the stove. Do not move the rice, let it sit on the stove. Do not uncover it. After 3 hours it will absorb all the water and it is done.

CHICKEN POCKETS (ANOTHER EASY RECIPE)
2 cups of cooked chicken (canned chicken by the tuna fish in a store)
4 ounces of cream cheese, softened
2 tablespoons of melted butter
dash of pepper
1/8 tsp cumin
1 can of crescent rolls

Cream together the cream cheese, butter, pepper, cumin. Add the chicken and mix together. Roll the crescent rolls out flat on a cookie sheet. Put 2 tablespoons of mixture in the middle and wrap up the edges, covering the mix completely. Cook according to the crescent roll package.

To make the gravy to go over this, simply combine like 1/4 cup of water to 1 can of cream of chicken soup and heat it up.

Choosing what to eat is always so hard! We go through a similar process very regularly. My husband doesn't like to make suggestions for food if it's not something we have already in the fridge or pantry. That makes it hard when the fridge is empty and the pantry is looking bare!

One thing we've started is getting out cookbooks and post-it notes. We both go through and put our color post-it notes on the pages where there's a recipe we're interested in trying. That way we have a whole bunch of yummy ideas that we can choose from.

Our never fail options include: broiled nachos with all the toppings (which we eat straight off the pan sitting close to each other on the sofa watching movies...), grilled chicken, salad with all the toppings (and some grilled chicken!), salmon anyway we can get it, and enchiladas because you can throw anything in them!

We have the same-same-same problem at our house... Only, then, whatever I make...my 3year old doesn't like it. lol! I am so burned out on cooking the same things and eating the same things. I need more idea's too!

My mom makes the best Chicken & Dumplings but I don't know how to make them LOL. Its one of those things that she just has in her head. She says that you never put potatoes in chicken & dumplings. Also her enchiladas are good.
